“Petrol Muffins” Blue Almond and Walnut Muffins
Blue almond and walnut muffins are what a midnight baking session brings to life.
The basic recipe is from a Bosch cookbook but modified by me.
Ingredients:
110g honey, 3 Eggs, 60g Butter, 100g Flour, 30g Ground Almonds, 30g Ground walnuts, 1 Sachet Vanilla Sugar, 1 Sachet Baking Powder, 1 Apple, 20g food colouring in your favourite colour, 1 tsp/per muffin homemade apple puree
The recipe is pretty straightforward: flour, baking powder and vanilla sugar are sifted and put into a bowl, the ground almonds and walnuts are added, and a whole apple is put into a mixer with 110g of honey till it's a smooth, thick liquid and added to the dry goods.
Add the blue food colouring and butter to the mixture. Now we are separating 3 egg jokes from the egg whites! The joke goes straight to our beautiful petrol blue cake batter.
Beat the whites well till stiff, and carefully fold the egg whites into the dough. This is going to give your Muffins the most delightful, fluffy consistency.
I prepare the oven up to 160 °C, fill about three-quarters of the mixture to each form, add a small spoon of homemade apple puree, then add the rest and top with some almonds.
Now, we need to quickly put the muffins into the oven to start baking and catch the puree in the centre of the muffins for a fruity core.
I am backing for 20 min at 160 °C!
Take out the muffins and sprinkle them well with powdered sugar while they are still warm. Now we can let the drunken petrol muffins cool down.
